Beef and Bean Chimichangas


4 1/2 stars is what Hubs gave this favorite mexican entree. Super easy and healthier than its fried friend. This one is baked!! Tasted great and we will definitely have this again.

Ingredients

1 lb of lean beef (wonder if you could use ground turkey?)
1 quarter of an onion chopped
1 half of green bell pepper chopped
3/4 can of enchilada sauce
1 can refried beans
8 flour tortillas
Shredded cheese
1 roma tomato chopped
2 cups shredded lettuce
1/2 cup of light sour cream
Butter or spray butter

Directions

1. Preheat oven to 350
2. Saute onion and bell pepper in a little EVOO in a skillet. Add ground beef and brown. Then add enchilada sauce and cook over medium heat for about 5 minutes.
3. Spread a thin layer of beans on a tortilla. Spoon the beef mixture on tortilla. Add cheese. Then roll up tucking in the ends. Put on a baking sheet seam side down. Butter the top.
4. Bake for about 30 minutes or until golden brown. Serve with sour cream, lettuce and tomato
